Burrata Tomato Pasta

Ingredients
- 12 oz pasta (spaghetti, linguine, or rigatoni)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 3 cups cherry tomatoes
- 1 burrata ball (8 oz)
- 1/2 cup parmesan cheese, grated
- 1/4 cup fresh basil, torn
- 1/2 tsp red pepper flakes
- Zest of 1 lemon
- Salt and black pepper
- Reserved pasta water
Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente.
Before draining, reserve about 1 cup of pasta water. Drain the pasta and set aside.
While the pasta cooks, heat olive oil in a large skillet over medium heat.
Add the garlic and cook for about 30 seconds until fragrant, being careful not to let it brown.
Add the cherry tomatoes and season with salt, pepper, and red pepper flakes.
Cook for 8–10 minutes, stirring occasionally, until the tomatoes begin to burst and create a light sauce.
Add the cooked pasta to the skillet and toss everything together.
Stir in the parmesan cheese and a few splashes of reserved pasta water until the sauce lightly coats the pasta.
Add half of the basil and toss gently.
Transfer the pasta to serving bowls or a large platter.
Tear the burrata over the warm pasta so the creamy center spreads into the dish.
Finish with the remaining basil, lemon zest, extra parmesan, and freshly cracked black pepper before serving.
