Creamy Tuscan Salmon
Pan-seared salmon tucked into a creamy garlic parmesan sauce with sun-dried tomatoes and spinach.
Ingredients
- 4 salmon fillets
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 cups baby spinach
- 1 tbsp lemon juice
- Fresh basil, for serving
Instructions
Season salmon with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear salmon for 4 to 5 minutes per side, then transfer to a plate.
Melt butter in the same skillet and cook garlic for 30 seconds.
Add sun-dried tomatoes and stir for 1 minute.
Pour in cream and bring to a gentle simmer.
Stir in parmesan until the sauce thickens.
Add spinach and lemon juice.
Return salmon to the skillet and spoon sauce over the top.
Serve warm with basil.
