Crispy Chipotle Beef Tacos

Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1–2 chipotle peppers in adobo, finely chopped
- 1 tbsp adobo sauce
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 8 small corn tortillas
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/4 cup diced onion
- Fresh cilantro, chopped
- Lime wedges for serving
- Salt and black pepper
Instructions
Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3–4 minutes until softened.
Add the minced garlic and cook for about 30 seconds, stirring constantly so it does not burn.
Add the ground beef to the skillet. Break it apart with a spoon and cook until browned and slightly crispy around the edges.
Stir in the chipotle peppers, adobo sauce, cumin, smoked paprika, oregano, salt, and black pepper.
Cook for another 3–4 minutes so the beef becomes smoky, flavorful, and well coated in the seasoning.
Warm the corn tortillas slightly so they are flexible and easier to fold without breaking.
Add a spoonful of chipotle beef and a sprinkle of cheese to one side of each tortilla, then fold gently.
Place the folded tacos in a lightly oiled skillet over medium heat. Cook for 2–3 minutes per side until golden, crispy, and the cheese is melted.
Transfer the tacos to a plate and top with diced onion, fresh cilantro, and a squeeze of lime juice.
Serve warm with salsa, crema, guacamole, or your favorite taco sauce.
