Marry Me Chicken Pasta
Tender chicken, sun-dried tomatoes, parmesan, and pasta tossed in a creamy garlic sauce that tastes romantic enough for date night but easy enough for a weeknight.
Ingredients
- 12 oz penne or rigatoni
- 1 lb boneless skinless chicken breasts, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated parmesan cheese
- 1/2 tsp red pepper flakes
- 2 cups baby spinach
- Fresh basil, for serving
Instructions
Cook the pasta in salted water until al dente, then reserve 1/2 cup pasta water and drain.
Season the chicken with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet and cook the chicken until golden and cooked through. Transfer to a plate.
Add garlic and sun-dried tomatoes to the skillet and cook for 1 minute.
Pour in the heavy cream and chicken broth, scraping up the browned bits from the pan.
Stir in parmesan and red pepper flakes until the sauce is smooth.
Add spinach and let it wilt into the sauce.
Return the chicken and cooked pasta to the skillet, tossing until coated. Add pasta water as needed.
Serve warm with basil and extra parmesan.
