Oreo Cheesecake Bars
Creamy cheesecake bars loaded with crushed Oreo cookies over a chocolate cookie crust.
Ingredients
- 24 Oreo cookies, divided
- 4 tbsp melted butter
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- Pinch of salt
Instructions
Preheat the oven to 325°F (165°C) and line an 8-inch pan with parchment paper.
Crush 16 Oreos and mix with melted butter.
Press the crumb mixture firmly into the pan.
Beat cream cheese and sugar until smooth.
Add eggs one at a time, then mix in vanilla, sour cream, and salt.
Fold in chopped Oreos.
Spread the filling over the crust.
Bake for 35 to 40 minutes until the center is just set.
Cool completely, then chill for at least 3 hours before slicing.
