Street Corn Chicken Skillet
Juicy chicken, sweet charred corn, creamy lime sauce, cotija-style cheese, and fresh herbs come together in one skillet for a bright summer dinner.
Ingredients
- 2 chicken breasts, sliced into cutlets
- 2 cups corn kernels, fresh or frozen
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/3 cup Greek yogurt or sour cream
- 2 tbsp mayonnaise
- 1 tbsp fresh lime juice
- 1/2 cup cotija-style cheese or feta, crumbled
- 2 green onions, sliced
- Fresh cilantro or parsley
- Salt and black pepper
- Lime wedges for serving
Instructions
Pat the chicken dry, then season both sides with salt, black pepper, chili powder, smoked paprika, and garlic powder.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, until golden and cooked through.
Transfer the chicken to a plate and let it rest while you prepare the corn topping.
Add the corn to the same skillet. Cook for 5–6 minutes, stirring occasionally, until the kernels are lightly charred and sweet.
In a small bowl, stir together Greek yogurt, mayonnaise, lime juice, a pinch of salt, and a little black pepper until smooth and creamy.
Lower the heat and spoon the creamy lime sauce into the skillet with the corn. Stir gently until the corn is coated but still bright and textured.
Return the chicken to the skillet and spoon the creamy street corn mixture over the top.
Sprinkle with crumbled cotija-style cheese, sliced green onions, and fresh cilantro or parsley.
Finish with extra lime juice and serve warm with rice, tortillas, potatoes, or a simple green salad.

Ingredient Notes
Corn is the star of this recipe, and charring it in the skillet makes it sweeter, deeper, and more flavorful.
Greek yogurt or sour cream creates the creamy base, while lime juice keeps the sauce fresh. Cotija-style cheese adds salty richness, but feta works well too.
Tips For The Best Skillet
- Let the corn sit in the skillet briefly before stirring so it can char.
- Do not overcook the chicken so it stays juicy.
- Add the creamy sauce on low heat to keep it smooth.
- Finish with fresh lime right before serving.
Variations
Add avocado, black beans, jalapeños, roasted peppers, tortilla strips, or serve the chicken sliced over rice bowls for a different summer dinner.
